We are all busy, all tired and don't have enough time! So when the Healthy Mummy sent me their new book - The Busy Mum's Guide to Weightloss - I wasn't sure what to expect. I don't have time to be counting up calories and keeping a food diary. And I don't want to be bothering with meals that have 100 ingredients in them that cost me a fortune.
However, I was pleasantly surprised! The Busy Mum's Guide to Weightloss is a 28-day plan that gives you recipes for three meals a day plus snacks and smoothies. It is easy to read, divided into four, colour coded sections for the four weeks. Each section has a weekly menu overview and a shopping list and then beautiful, easy to follow recipes.
A lot of the recipes are family favourites, just done a little differently to make them more healthy. There are bolognese, pasta, fritters, curry, pizzas, pancakes and delicious sweet treats.
I decided to try out one of their recipes for myself - now *disclaimer* I'm not much of a cook unless it involves chocolate and baking. I get bored easily and I don't like to be in the kitchen. Hubby does most of the cooking and if he's not here I'm known to have cheese on toast or some fruit. But I gave it a shot!
I chose the Zoodles with Roast Vegetables and Halloumi. We eat zoodles quite a lot and we all love halloumi! It was SO easy! I quickly chopped the veg and put them in the oven with garlic and oil and zoodled the zucchinis. A quick fry of the halloumi and I popped the veggies and halloumi on top of the zoodles and we are good to go.
