I love a chocolate chip cookie but I hate rolling them all! This chocolate chip cookie slice is so much faster to make and makes a great lunch box treat because you can cut it to fit the space available in the lunch box. It's one of Tully's favourites! If you want something with oats, I also have a chocolate chip oat slice that makes a great lunchbox snack.

Ingredients
To make the chocolate chip cookie slice you will need:
Plain flour
Cornflour
Eggs
Brown sugar
Caster sugar
Bicarb soda
Vanilla
Butter
Chocolate chips
Salt
Method
Combine the flour, cornflour, bicarb and salt in a bowl and set it aside for later.
In a seperate bowl, add both the sugars. Melt the butter and pour into the sugars, mix until combined and there are no lumps. Then add the egg and vanilla and whisk together until it's smooth. Check for those sugar lumps and make sure you get rid of them all.
Add the mixture to the dry mixture and mix until fully combined, then add the chocolate chips. Mix them through.
The mixture will be a bit wetter than regular cookie dough. Push it into a lined 20x20cm square tin (or a rectangle slice tin) and bake for about 30 minutes. It should be golden brown on top and not wet if you push a skewer in the middle.
Let your slice cool for an hour before removing from the tin and slicing into pieces.
Store in an airtight container in the pantry.
Substitutions
My daughter is gluten free so I sub out the plain flour for gluten free flour and it works perfectly. I use the same measurements so there's no need to alter that.
If you prefer white chocolate chips you can add those instead. I like dark chocolate chips in my chocolate chip cookie slice, but you go for whatever you prefer.

- 1 baking tin 20x20cm or rectangle

- 2 ¼ cup plain flour I substitute for Free From Gluten flour in the same quantity.
- 2 teaspoon cornflour
- ¼ cup caster sugar
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla paste
- 180 g butter melted
- ¾ cup Chocolate chips
- Salt to taste
Instructions
- preheat your oven to 175 degrees Celsius and line your baking tin with baking paper. Make sure you have enough on the sides that you can lift it out once it's cooled.
- combine your flour, bicarb, salt and cornflour in a big bowl and set aside.
- In a smaller bowl, add your caster sugar and brown sugar. Melt your butter and let it cool for a few minutes. Then add it to your sugar and mix it until it's smooth. Pay attention to any sugar lumps that may occur.
- Then, add your egg and vanilla paste and whisk until all fully combined.
- Pour your sugar mixture into the dry ingredients and stir until it's completely mixed together.
- Add in your chocolate chips and mix until the chocolate chips are well distributed into the mix.
- Push the mixture into your lined cake tin (it will be a little wetter that regular chocolate chip cookie mix). Use your hands to firmly distribute the dough across the tin and make sure to push it into the corners.
- Cook for 30 minutes or until golden brown on top. Once you take it out of the oven, sprinkle some sea salt on the top if you like sweet and salty.
- Let it cool for an hour and then remove from the tin and slice. Store in an airtight container in the pantry.
