This vanilla sugar biscuit recipe by is perfect for creating Christmas piñata cookies- in any form. Recipe- Makes 25 biscuits
125 grams butter
150 grams caster sugar
Vanilla 1 teaspoon
1 egg
250 grams flour
½ teaspoon baking powder
Method
Beat the butter and sugar until creamy and pale. (add colour at this time)
Add the vanilla
Beat in the egg into the sugar and butter mixture
Sift the flour and baking powder into a bowl
Add the flour in 2 batches to your mix until a dough is formed.
Rest for half an hour
Roll out and cut shapes
Bake 8 minutes at 180 degrees Celsius
To create piñata cookies, layer 6 cookies, cutting a small square (or star) in the centre of the middle four layers. Fill the middle with mini chocolates or sweets and stick the layers together with royal icing.
For the present piñata cookies, seperate into batches and colour each batch a different colour. Tie them with a red sour strap.
For the star piñata cookies, use fondant icing on top (stuck with a little water or a thinly spread layer of royal icing) and decorate as you would like.)
