Sausage rolls are always a hit in our house and I prefer to home make them so that I know what's in them. They are something everyone will eat and they are quick and easy- perfect for when you are in a rush. If you cute them in to small pieces they also make a great lunchbox filler too!
Ingredients
Puff pastry
750g pork sausage mince
1 onion grated
Salt and pepper
¼ teaspoon mixed herbs
2 slices thick bread
1 tablespoon English mustard
Instructions
Soak bread in barely enough water to cover for 10mins
Place mincemeat, drained bread, mustard, herbs, salt and pepper into a bowl and combine
Cut pastry square in half and place some of sausage meat in middle of one half and fold over.
Cut into smaller pieces
Put in fridge for 10-15 mins
Brush with egg yolk and cook at 220 for 10 mins then reduce temp to 180 for a further 10-15 mins
These are great hot, or cold in the lunchbox!
Variations
I mince my pork in the Thermomix but you can use sausage mince from a pork sausage (I can't find pork sausage mince anywhere!)
You could also hide veggies in it, especially if you chopped them fine in the Thermimix or grate them.
We throw in some Super Foods for Kidz Vital Veggie Powder as well because it's full of nutrition and it's hidden from the kids if you have ones like my teens- who panic at a speck of green!
