This lamington cheesecake layered dessert is one of my favourite recipes. Christmas desserts are my favourite desserts of the year. I love coming up with ideas, researching and buying the Christmas magazines and coming up with new ideas that will wow my guests. We host Christmas and I'm in charge of desserts.
This year I've come up with this layered dessert that incorporates all the things I love about Australian summers. Lamingtons, meringues and fresh berries.

Lamington cheesecake layered Christmas dessert
Here's what you need for your lamington cheesecake layered dessert:
First layer
Lamington Cake
Second layer
Strawberry no bake cheesecake
Thickened Cream
Cream Cheese
caster sugar
Sour Cream
Strawberry Jam
Third layer
Meringue nests
Fourth layer
Thickened cream
Icing mixture
Fifth layer
Meringue Vanilla Minis
Strawberries
Raspberries
Blueberries
Mint
How to make it
Prepare and line a springform cake tin
First layer
Slice lamington cake thinly and cover the base of the cake tin
Second layer
Whip the thickened cream and set aside.
Beat the cream cheese and caster sugar together with a hand beater or in a mixer until smooth. (make sure you scrape the bowl to get anything that didnt get mixed in).
Add the icing mixture, sour cream and jam and beat for about 2 minutes, until smooth and properly mixed, with no lumps.
Fold the whipped cream in gently with a spatula so that you don't lose the fluffiness.
Make sure it's all combined and pour over the lamington.
Put in the fridge to set all day or overnight.
Third layer
Cover the set cheesecake with a layer of meringue nests.
Fourth layer
Whip the thickened cream and icing mixture until thick and cover the meringue nests.
Fifth layer decorate the top with the mini meringues, berries and mint.
If you would like to make a strawberry coulis to drizzle here is how - Chop five strawberries and add to a small saucepan with a splash of water and a teaspoon of caster sugar. cook over medium heat until the strawberries are mushy. Push them through a sieve and collect the strawberry sauce underneath. Use this to drizzle!

- 1 Spring form tin
Ingredients
Base Layer - cake
- 1 450g lamington bar cake can use jam and cream lamington squares as well.
Second Layer - strawberry no bake cheesecake
- 1 cup thickened cream
- 2 tubs sour cream
- ½ cup caster sugar
- ¼ cup sour cream
- 4 tablespoon strawberry jam
Third layer - meringue
- 1 pack meringue nests
Fourth layer - cream
- 600 ml thickened cream
- 2 teaspoon icing sugar
Fifth layer - topping
- 1 punnet blueberries
- 1 punnet raspberries
- 1 punnet Strawberries
- 1 bunch Mint
- 1 packet Meringue vanilla minis
Instructions
