I love creating Christmas desserts! It's the best season for desserts and baking. This lamington pavlova wreath is the perfect combination of two of Australia's favourite desserts - pavlova and lamingtons!
This is summery, fresh and perfect for Christmas celebrations. It will only take you about 15 minutes to assemble if you have the cream ready to go, so it's the type of dessert you can put together right before you serve it - to keep fridge space free!
The summer fresh berries are the perfect compliment to the vanilla cream, cake and meringue. This will serve up to 10 people.

Steps
Beat the cream, vanilla and icing sugar together and then fill your piping bag.
Place the lamingtons (upright), alternating with the meringue nests, using the cream to stick them together.
Once you've completed the circle, using the rest of your cream to pipe on the top of the wreath.
Then, sprinkle your blueberries and raspberries around the top.
Leave the tops of your strawberries on to add some great, and just place them around the top. Then add your mini meringue.
Now, make a 'cheat's berry coulis' using the jam and a little water. Heat on the stove until combined and then drizzle over the top using a teaspoon.

Lamington Meringue Wreath
Equipment
- 1 piping bag with nozzle
- 1 small saucepan
- 1 beater
Ingredients
- 1 packet finger lamingtons
- 3 packets meringue nests
- 300 ml thickened cream
- 1 punnet strawberries
- 1 punnet blueberries
- 1 punnet strawberries
- 1 tablespoon icing sugar
- 1 teaspoon water
- 2 tablespoon strawberry jam
- 1 teaspoon vanilla
- 1 packet mini meringues
Instructions
- Combine the thickened cream, icing sugar and vanilla in a bowl and beat until thick.
- Fill your piping bag (with a large piping tip) with the cream
- Pipe the cream on one finger lamington and then place it upright on your board or plate. Pipe the cream on your meringue and place the side with no cream up against the lamington's cream side. Alternate lamington and meringue, using the cream to stick them together, until you have a full circle. The amount of lamingtons and meringues may vary depending on the size of your wreath.
- Once your wreath is completed, pipe the rest of your cream around the top of the wreath.
- Once you've finished the cream, start with the blueberries and place them around the cream. Don't do too many because you have more to come!
- Add the raspberries and then place your strawberries around the top. You don't need too many. Leave the tops on for a splash of green as well.
- Once your berries are on, place a few of your mini meringues around the top.
- To make the 'cheat's berry coulis' just pop your strawberry jam and water into a saucepan and stir until combined. If it's a little too runny you can put a little icing sugar in as well.
- using a teaspoon, drizzle some of your coulis over the top and then serve!
