I'm not much of a cook (except when it comes to desserts!) but this minestrone soup is my one, go-to recipe for a quick and easy winter dinner. It takes about 2 minutes to throw in the pot and takes about 30 minutes cooking time.
Here's how I make it!
Ingredients
2 cans of tomatoes
4 cans of water (as in I just use the cans to measure the water)
1 carrot
½ onion
4 mushrooms
½ zucchini
⅓ bunch broccoli
handful small pasta/spaghetti
pinch brown sugar
Chilli powder
Pizza topper/ Italian herbs
Any other veggies you want to put in! Sometimes I put peas, corn, beans or cauliflower in- it just depends what's in the fridge.
Method
Get a big stock pot and pop on the heat with a little olive oil. Sauté your onions and mushrooms and add the two cans of tomatoes and the 4 cans of water.
Throw in your veggies, pasta, brown sugar and season to taste. Cook for about 30 minutes. I serve with cheese on top and garlic bread!
