I love fried rice- when it's a good one! In the past I've made them and they become a bit mushy and gluggy, yuck! But I think I've finally perfected it with this recipe! I make it all the time and I just vary the veggies depending on what I have in the fridge. It makes a great lunch the next day too- just reheat by refrying.
Ingredients
4 cups of pre cooked, drained, cold rice
2 eggs
1 chicken breast
3 bacon rashers
½ cup peas
½ cup corn
¾ cup broccoli
⅓ red capsicum
Kecap Manis (Indonesian sweet soy sauce)
Olive oil
McCormick's Friend Rice Flavour Shot (optional)
Method
Beat the two eggs and fry in a frying pan. Cut in strips and set aside.
In a wok, fry the chopped bacon and chicken with the olive oil and the flavour shot.
Add veggies when the meat is cooked and cook for about 3 minutes
Add rice, egg strips and soy sauce to suit and combine
Serve!
Variations
If you don't eat rice we also make it with cauliflower rice. Just process your cauliflower as normal into rice size bits but don't pre cook. Just chuck it in instead of the rice and cook for a couple of minutes- it turns out perfectly!
