Ingredients
Cake
  • 500g butter
  • 500g caster sugar
  • 8 eggs
  • 500g self raising flour
  • 200ml mandarin juiceyou can also use orange juice
Icing
  • 250g icing mixture
  • 50ml mandarin juiceor orange juice
Instructions
  1. Cream butter and sugar until ribbons form.
  2. Add eggs one at a time, beating thoroughly, between each.
  3. Add flour all at once and slowly add the orange juice until blended.
  4. Pour into a 30 cm lined springform cake tin. (if you only have a regular spring form tin you may have a bit too much mixture. If you do, use some in mini loaf tins or cupcake tins)
  5. Cook for one hour at 170C. (Always check with a skewer.)
  6. Leave on rack to cool.
  7. Make icing then spread in top.
