These cute reindeer cupcakes are so easy to make and they are always a hit at school and daycare Christmas parties. And they are a fun activity you can do with the kids in the lead up to Christmas.

Reindeer carrot cupcakes - Ingredients
Cupcake batter
2 cups grated carrots
2 eggs (lightly beaten)
⅔ cup vegetable oil
⅔ cup sugar
1 cup plain flour
1 teaspoon Bicarb
½ teaspoon baking powder
Icing
100g Cream Cheese block (room temperature)
50g butter at room temperature
1.5 cups icing sugar
Decorations
Milk Chocolate Coated Pretzels
Jaffas
Candy Eyes
Reindeer carrot cupcakes - Method
Cupcakes
Preheat oven to 180 degrees celsius.
Grate the carrots and place in a large bowl (I did mine in the Thermomix on speed 7 for 3 seconds but you can grate by hand as well.)
Beat the eggs together in a small bowl then add to carrots with the oil and combine.
Add the flour, bicarbonate of soda, baking powder and sugar and combine gently. Don’t over stir though!
Line a 12 hole cupcake tin with cupcake cases and then distribute batter evenly.
Cook for 20 minutes or until cooked through.
Icing
Beat cream cheese, vanilla paste, butter and icing sugar together until smooth.
Decorate with Woolworths Milk Chocolate Coated Pretzels as antlers, add eyes and Jaffas for your Rudolph noses!
