When the Reindeer Carrots arrive in Woolworths the kids know that it’s almost Christmas! Every year we buy a bag to put out for Santa’s reindeer, but this year we are making sure we buy as many bags as we can, because this year 10c from every bag is being donated to WIRES.
WIRES (NSW Wildlife Information, Rescue and Education Service Inc.) is Australia’s largest wildlife rescue organisation. WIRES has been rescuing and caring for wildlife for over 30 years and WIRES mission is to actively rehabilitate and preserve Australian wildlife and inspire others to do the same.
So, to help support WIRES this Christmas, I’ve put together these fun reindeer carrot cupcakes. They are perfect for Christmas parties, special occasions, or even a little Christmas treat in the lunch box in the lead up to Christmas.
Reindeer carrot cupcakes for Christmas
Reindeer carrot cupcakes – Ingredients
2 cups grated Woolworths Reindeer Carrots
2 eggs (lightly beaten)
⅔ cup vegetable oil
⅔ cup sugar
1 cup plain flour
1 tsp Bicarb
½ tsp baking powder
100g Woolworths Cream Cheese block (room temperature)
50g butter at room temperature
1.5 cups icing sugar
Reindeer carrot cupcakes – Method
Preheat oven to 180 degrees celsius.
Grate the carrots and place in a large bowl (I did mine in the Thermomix on speed 7 for 3 seconds but you can grate by hand as well.)
Beat the eggs together in a small bowl then add to carrots with the oil and combine.
Add the flour, bicarbonate of soda, baking powder and sugar and combine gently. Don’t over stir though!
Line a 12 hole cupcake tin with cupcake cases and then distribute batter evenly.
Cook for 20 minutes or until cooked through.
Beat cream cheese, vanilla paste, butter and icing sugar together until smooth.
Decorate with Woolworths Milk Chocolate Coated Pretzels as antlers, add eyes and Jaffas for your Rudolph noses!
