No one wants to spend hours in the kitchen in summer- not when we could be in the pool, or at the beach or just outside in the garden. Fresh salads are the easiest in summer so we have three super easy summer salad recipes that will literally not take you more than 15-minutes to make. I have tried and tested everyone and none of them took more than 15-minutes in the kitchen. They are also super easy- which is great because I’m no cook!
So here you are- your three, 15-minute summer salads!

Chicken Mexican Summer Salad
This is great for a big group and you can serve it with mini tortillas to help fill people up. The ingredients all combine beautifully and the mango salsa adds some extra colour. It’s easy and even the kids will eat it.
Ingredients
500g chicken
Bag of Woolworths Mexican Style Salad Kit
1 mango
1 red capsicum
1 lime
1 bunch coriander
1 red onion
1 packet of taco seasoning
mini tortilla wraps if desired
Method
Dice up your chicken and stir-fry with taco seasoning until cooked (mine took 15-minutes).
While chicken is cooking tip Mexican Style Salad Kit into a bowl.
Dice mango, red capsicum, red onion and coriander and combine in a small bowl with lime juice.
When chicken is cooked place on top of the salad mix and drizzle with the included chipotle sauce.
Eat either as a salad with the mango salsa on the side or wrap in mini tortillas as soft tacos. I love this because it’s a full dinner that tastes amazing!
Thai Beef Summer Salad
This is the easiest salad (and probably my favourite). It’s only 2 ingredients, took me under 15-minutes and I ate it for lunch and dinner! You can’t ask for more than that in a meal!

Woolworths Simply Stir-fry Thai Style Beef
Cashews if you like them
Method
Stir-fry beef in a wok and add the salad to a bowl. Add the included Thai dressing and sprinkle with some cashews if you like them. That’s it- you’re done and dinner is served. Told you it was quick!
Prawn, Mango and Avocado Tropical Summer Salad
If the Thai salad is the one you are whipping up for an easy dinner, this prawn, mango and avocado salad is the one you’ll be taking to every event this summer. All the colours give it the wow factor and everyone will love it. And of course, it’s super easy, with no cooking required!

Ready to eat prawns

Mango
Avocado
Method
Tip the salad kit into a bowl and add the prawns on top. Dice your avocado and mango and add to the top of the salad. Sprinkle with the included coconut flakes and add the included mango chilli dressing. There you have it- a salad that can be assembled on the go and looks like you spent hours on it!
