Easter Egg Lamington Wreath

An easy, no bake, Easter dessert

Equipment

  • Stand mixer/ beater/ Thermomix
  • piping bag
  • Piping tip

Ingredients
  

  • 1-2 packets Lamington Fingers
  • 600 ML Thickened Cream
  • 1 tablespoon icing sugar
  • 1 tablespoon strawberry jam
  • 1 teaspoon vanilla paste
  • strawberries
  • raspberries
  • Easter eggs I used Darrell Lea mini eggs and Cadbury solid eggs

Instructions
 

  • Beat the cream, strawberry jam, vanilla paste and icing sugar together until the cream is thick enough to pipe.
  • Fill a piping bag with the cream (I use a Wilton tip for the pattern but you don't have to.)
  • Pipe a strip of cream on each lamington and place them in a circle or oval. I went for the oval because it looks like an Easter egg!
  • Once you've formed your ring of lamingtons, pipe cream on top.
  • Then decorate the top with berries and Easter eggs (or anything that you love!)
