    Antipasto Salad Recipe

    I Love summer- it's a time for salads and fresh food. No more heavy meals and winter warmers- in our house its all about fresh fruit and fresh salad. There are so many variations on salads that you never need to have the same one twice.

    So when IGA sent us this delicious food hamper to celebrate their Christmas Made Easy campaign, I jumped at the chance to whip up their Antipasto Salad with Torn Rosemary Crutons! It was so quick and easy- and on the table in 20 minutes.

    Ingredients

    1 loaf of crusty bread, torn into 4-5cm pieces

    ⅓ cup virgin olive oil

    2 sprigs rosemary

    salt and pepper

    1 clove of garlic

    1 heads of curly leaf lettuce or a 200g bag of salad mix

    700g IGA antipasto ingredients including sun dried tomato, olives, roasted capsicum, artichokes, roasted eggplant, baby bocconcini

    6 slices of thinly sliced prosciutto

    100g thinly sliced chorizo

    1 punnet cherry tomatos

    1 long cucumber, sliced

    ½ bunch parsley (leaves)

    100g block parmesan cheese

     

    Method

    Preheat oven to 180 degrees celcius

    1. Place the chunks of bread in a bowl. Combine the olive oil, garlic, salt, pepper and rosemary in a food processor and blend to combine. Pour over bread and toss the bread, mixture and chorizo together. Tip onto baking tray and cook until golden brown (around 15 minutes).

    2. Wash and drain the lettuce and place into a a large serving bowl, scatter over the antipasto mix, prosciutto, halved cherry tomatoes, sliced cucumber and with a peeler shave the parmesan scattering over the top.

    3. Top this with the chunky rosemary croutons and the parsley and serve!

    So there you have it- the perfect summer dinner! It serves 4 decent size servings and is super yummy. I served mine in this gorgeous Tupperware Coastal Collection bowl. I love it because it looks great and it has a lid so you can easily take it places or pop the left overs in the fridge. It even has matching salad servers if you want it to be matchy matchy!
