    Easy, fast fish pie recipe the whole family will love

    Fish pie recipe

    On Sunday night we do the full English roast dinners so by Monday we are ready to cook something quick and easy. We live in a house where multiple meals are cooked. I know- it's entirely our fault- but with the 14 and 16 year old eating pretty much separate meals all the time and then us and the 3 year old, dinner can be chaos.

    So on Monday its this quick and easy fish pie, it feeds 3 out of 5 of us (the other two have a can of tuna with some pasta and cheese!). On Sunday night we have cauliflower cheese so we make extra sauce to use for the pie the following night.

    Here's what you need: (makes 3 pies)

    1 skinless, boneless piece of salmon (or white fish if you prefer)

    A batch of cheese sauce (that's 1 tablespoon of butter, 1 tablespoon of plain flour, 1 teaspoon seeded mustard, 1 ¼ cup of milk, handful of grated cheese) If you have a Thermomix then just half the batch in the book.

    1 cup of mixed dozen peas and corn (or any veggies you prefer)

    3 sheets puff pastry, thawed

    1 egg

    Here's how I make it:

    Pre heat the oven to 180 degrees celsius

    Make your cheese sauce by combining your flour, butter and mustard in a saucepan over medium heat until combined. Add milk bit by bit, stirring each time until it's all combined. Once it's all combined and a smooth sauce, add cheese and stir in until all mixed.

    Grill/ pan fry your fish and cook your veggies

    Break your fish up and stir it together into the sauce with the veggies. Mix til its all combined and the fish is completely broken up.

    Place your pastry sheets on a baking tray and place the mixture on one side. Fold over the pastry and seal the edges with your fingers or a fork.

    Beat the egg and brush over the pastry using a pastry brush.

    Place them in the oven and cook for 15-20 minutes (depending on your oven)

    Cut in half and serve! I find these quite big so my husband and I cut ours in half and have half for dinner and save the other half for lunch the next day. Its great reheated in the over for 10 minutes (in fact I think it's better).

    The 16 year old just eats a whole one on one sitting!

    So there you go- a quick and easy fish pie recipe for you when you can't be bothered to cook. After all if I can make it anyone can because I'm no cook!
