    No Bake Easter Chocolate Slice

    This no bake Easter chocolate slice is a family favourite. Originally known as 'uncooked chocolate cake' its a recipe we have been making since the 80's. It was always my sister's favourite birthday cake. I've taken the basic idea and given it an Easter twist. It was originally from an old kids' recipe book I got for Christmas when I was about eight. It was my favourite and I made everything out of it. I've still got it, and its been well loved!

    Ingredients

    Plain biscuits

    Mini Marshamallows

    Butter

    Egg

    Caster Sugar

    Water

    Cooking chocolate (milk)

    Mini Eggs

    Method

    Line the inside of a loaf tin with baking paper

    Place the biscuits into a plastic bag and crush. I use Scotch Finger biscuits

    Melt the butter in a saucepan over a low heat.

    Beat the egg and sugar in a bowl and then add the melted butter. Beat until the mixture is smooth and lemon in colour.

    Melt the chocolate and add it to the egg mixture. Whisk or beat together until smooth and fully combined. (if you don't combine it properly you can end up with butter pockets in your slice).

    Stir in the biscuit pieces and the marshmallows.

    Press into tin and smash up your mini eggs.

    Sprinkle them over the top of the slice and refrigerate until set.

    Variations

    For the non Easter version of my no bake Easter chocolate slice leave out the marshmallows and use walnuts instead. Don't add the eggs on top.

    For the gluten free version I just use gluten free scotch fingers or any plain biscuit depending on preferences.

    • loaf pan

    Ingredients
      

    • 225 g plain biscuits I use Scotch Fingers but anything works
    • 185 g butter Melted
    • 1 egg
    • 2 Tbs caster sugar
    • 250 g milk cooking chocolate I use Nestle Plaistowe
    • ½ cup mini marshmallows
    • 1 bag Cadbury Mini Eggs crushed

    Instructions
     

    • Line the inside of a loaf tin with baking paper
