    How good does this Easter Egg Lamington Wreath look? It was so easy to make. It takes about 15 minutes to assemble. It's the perfect easy to share dessert for your Easter lunch.

    Ingredients

    Finger lamingtons

    Thickened cream

    Strawberry jam

    Vanilla paste

    Icing sugar

    Strawberries

    Raspeberries

    Darrell Lea Mini Eggs

    Cadbury eggs

    How to make your Easter Egg Lamington Wreath

    Beat the cream, strawberry jam, vanilla paste and icing sugar together until the cream is thick enough to pipe.

    Fill a piping bag with the cream (I use a Wilton tip for the pattern but you don't have to.)

    Pipe a strip of cream on each lamington and place them in a circle or oval. I went for the oval because it looks like an Easter egg!

    Once you've formed your ring of lamingtons, pipe cream on top.

    Then decorate the top with berries and Easter eggs (or anything that you love!)

    Tips and variations

    Make sure your cream is really thick. It's best for piping.

    Much like a pavlova, this dessert is best assembled right before eating. It is super fast if you prepare the cream earlier on and just keep it in the fridge. Then you just pipe and decorate.

    You can use lactose cream or plant based cream if you prefer.

    • Stand mixer/ beater/ Thermomix
    • piping bag
    • Piping tip

    Ingredients
      

    • 1-2 packets Lamington Fingers
    • 600 ML Thickened Cream
    • 1 tablespoon icing sugar
    • 1 tablespoon strawberry jam
    • 1 teaspoon vanilla paste
    • strawberries
    • raspberries
    • Easter eggs I used Darrell Lea mini eggs and Cadbury solid eggs

    Instructions
